OT - Lets all sit back and enjoy a good smoke

I hate all of you! Im starving, stuck on a job site in the middle of no where for another 4 hours.
 
I recently stepped up to a Weber grill. I'm hoping that I'm getting he smoker for Father's day.
 
Rubbed and refrigerated over night. Cut and stacked on racks, and all I need to do now is crack a few beers :beer:

We have a electric smoker over at my folks house. I've never smoked any meats before but I have 3 nice venison roasts in the freezer I'd like to do something with in there. Any suggestions?
 
I love my smoker its an electric Bradley ...cant beat it! i had an offset fire box smoker before this one and I felt a little like i was cheating when i bought this new one.. all digital set temp and time and have a beer I would buy this thing again in a heartbeat! lol

Oven versions are fine. We used to make beef brisket when I worked at stadium sports bar and grill at foxwoods. I bet for every case of 4 I made a whole one went to the staff. Some lawreys seasoned salt garlic brown sugar cracked black pepper and kosher salt liquid smoke. Put it in the oven covered in foil little bit of water the liquid smoke. Then we made a awesome burbbon bbq. It was amazing. Way better than chesters bbq or that other one that just opened in groton
 
Added a cold smoker kit, hat the butcher cut sirloin tip thin, marinated for 16hrs and just started the jerky an hour ago at 100 degrees for hopefully 12 hours. Should be ready tomorrow morning sometime. Cold smoker goes for 6 hours on a single load so I set the alarm for 2 am lol.

Not that I'm experienced, but "cold smoker" is a brand new term to me. I see that you're using it like a dehydrator, but is that all it does?
 
Cold smoking allows you to run a much lower temp for things like cheese, jerky, lox, etc. This side box takes the main box to about 100 degrees. It also acts as a larger hopper for when I want to do a traditional smoke. I would set the digital temp on the main box to say 220, fill the cold smoker and have nice smoke for six hours straight on one load. You can also layer the load with different wood, coal etc for that traditional grill flavor all controlled in a digital box. Very happy with this smoker.

:) Cold smoker is exactly as it sounds, you smoke without (or with very little) addition of heat. The way Tweaked is using it, yes he's essentially using it as a dehydrator. It should probably be noted that if you're cold smoking meat it absolutely has to be salt cured to prevent the growth of bacteria.

I use a cold smoker quite a bit during the cooler months to smoke cheese.
 
Sounds like there's almost as much to learn here as there is to learn about keeping a reef.
I'm actually getting pretty excited about jumping into this whole smoking thing. I just know it'll be another reason for my wife to invite people over here, I hate it when she invites people over here.
